{"id":37,"date":"2017-08-09T21:44:00","date_gmt":"2017-08-09T19:44:00","guid":{"rendered":"http:\/\/grill-artist.carl-gartendesign.de\/?p=37"},"modified":"2017-08-12T17:31:56","modified_gmt":"2017-08-12T15:31:56","slug":"asiatische-entenbrustfilets-mit-mango-chutney","status":"publish","type":"post","link":"http:\/\/grill-artist.carl-gartendesign.de\/?p=37","title":{"rendered":"Asiatische Entenbrustfilets mit Mango-Chutney"},"content":{"rendered":"<p><em>(4 Personen)<\/em><br \/>\n2 Entenbrustfilets (je ca. 300-400 g)<\/p>\n<p><em>W\u00fcrzmischung:<\/em><br \/>\n1 EL Paprikapulver<br \/>\nje 1 TL grobes Meersalz und gemahlener Koriandersamen<br \/>\n1 TL chinesisches F\u00fcnf-Gew\u00fcrze-Pulver (oder Wok-Gew\u00fcrz)<br \/>\nje \u00bd TL gemahlener Ingwer und gemahlener Piment<br \/>\n\u00bc TL Cayennepfeffer<\/p>\n<p><em>Mango-Chutney:<\/em><br \/>\n1 gro\u00dfe Mango<br \/>\n1 Schalotte<br \/>\n1 walnussgro\u00dfes St\u00fcck Ingwer<br \/>\n2 EL Wei\u00dfweinessig<br \/>\nca. 1 EL Mango-Balsamico<br \/>\nSaft von 1 Limette<br \/>\n2 EL Zucker<br \/>\nChiliflocken, Currypulver, Salz, Pfeffer<\/p>\n<p>F\u00fcr das Chutney die gesch\u00e4lte Mango in grobe W\u00fcrfel schneiden. Die Schalotte und den Ingwer fein w\u00fcrfeln. Essig, Limettensaft und den Zucker in einem Topf erhitzen. Mango, Ingwer, Schalotte und Chiliflocken dazugeben. 5-10 Minuten k\u00f6cheln lassen und das Chutney mit dem Mango-Balsamico, Currypulver, Salz und Pfeffer abschmecken. Vor dem Servieren abk\u00fchlen lassen.<\/p>\n<p>Zutaten der W\u00fcrzmischung in einer kleinen Schale vermengen. Die Haut und das darunter liegende Fett der gewaschenen Entenbrustfilets mit einem scharfen Messer einschneiden. Sobald die Holzchips zu rauchen beginnen die Entenbrust mit der Hautseite nach unten an den Rand der Glut legen und ca. 3-4 Minuten grillen, bis die Haut knusprig ist. Entenbrustfilets wenden und \u00fcber direkter starker Hitze weitere 3-4 Minuten auf der Fleischseite grillen.
